The head of cabbage (hulled) was salted and placed in a larch-wood tub. After maturation the head of the cabbage is soft and can be used for cabbage rolls and lasagna.
The leaves can also have a healing effect and can used on the body.
Season from mid-September to April.
The core for the cabbage is removed and filled un-iodized table salt and then laid in a larch-wood tub. Then the cabbage is seasoned with salt, caraway and juniper.
After 3 - 4 weeks, the sauerkraut is taken out again of the tub and is ready for sale.
