The fruit juice for this vinegar is extracted from the ancient pear varieties in Styria. The fruity, tart flavor has many facets and adds great flavor to fine cuisine or a finishing note to creative cuisine. It adds flavor to salads such as arugula, dandelion or chicory and is also adds a nice note to dishes with caramel.
Recipe idea:
Calf's liver with pear and avocado
Glaze pear slices in butter, splash with pear vinegar, then serve with avocado and tomato slices. Cover the liver with the glazed fruit and garnish with arugula or watercress.
