Zweigelt is a typical Austrian specialty wine. The juice of Zweigelt grape is also an ideal material for fermentation to produce wine vinegar because of the fullness of its flavor. In combination with olive oil, Zweigelt vinegar is a delicious ingredient for salads and antipasti Mediterranean style. It is ideal for further refining stew dishes, Viennese cuisine, goulash, cabbage, meat and potato stew.
Recipe:
Eggplant cream
Chop eggplant and sauté with a little cauliflower in a lot of olive oil. Cook until soft in sour cream, then puree, season with Zweigelt vinegar, garlic and cayenne pepper for a tasty spread!
