Persian blue salt comes from Iran and has a delicate bluish tinge caused by a shift in the crystal lattice. It has a high potassium content and can cause a tingling on the tongue at first with a mild taste at the end. It adds a balanced full-bodied taste to seafood and salads. The coarse, non-iodised salt is ideal for use in salt mills.
